Vietnamese Beef noodle soup (Pho bo)

Aku paling demen ama yang namanya Pho bo ini........tiap kali kalo makan direstoran Vietnam pasti pesennya ya Pho bo ini aja .........sangking tergila-gilanya ama makanan ini...........aku coba masak sendiri......hehehe.........hasilnya juga ok :)

Ingredients (serves 6)

  • 1kg beef bones
  • 3L (12 cups) cold water
  • 2 brown onions, chopped
  • 5cm piece ginger, peeled, sliced
  • 5 whole star anise
  • 2 cinnamon sticks
  • 1 tsp black peppercorns
  • 5 whole cloves
  • 1 tbs coriander seeds
  • 2 tbs fish sauce
  • 2 tbs lime juice
  • 100g thick rice noodles
  • 1 (about 200g) beef fillet steak, thinly sliced
  • 2 cups (110g) bean sprouts
  • 3 green onions, trimmed, thinly sliced diagonally
  • 2 red birdseye chillies, thinly sliced
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • Lime wedges, to serve

Method

  1. Place the beef bones, water, onion, ginger, star anise, cinnamon, peppercorns, cloves and coriander seeds in a large saucepan over high heat. Bring to the boil. Reduce heat to very low and cook, skimming surface occasionally of any fat with a metal spoon, for 3 hours or until liquid reduces by half. Remove from heat and set aside to cool. Strain through a fine sieve into a clean saucepan. Remove and reserve any meat from the bones and discard remaining solids.
  2. Place the soup over high heat and bring to a simmer. Add the fish sauce and lime juice and stir to combine. Taste and season with salt, pepper, fish sauce and lime juice.
  3. Meanwhile, place the noodles in a large heatproof bowl and pour over plenty of boiling water. Set aside for 5 minutes to soak. Drain well. Divide noodles and reserved beef evenly among serving bowls. Top with sliced beef. Pour the hot soup evenly among each serving bowl. Top with bean sprouts, green onion, chilli, mint and coriander. Serve immediately with lime wedges, if desired.

Strawberry & vanilla friands

Tiap kali kalo ngafe aku suka ngeliat kue ini...........kok kayaknya enak,.........pernah tuh beli sekali, trus ngeliat di resep2 kue........eh ada resep bikin friands.......tapi gak punya pan cetakannya. Eh...pas jalan2 ketoko jualan alat2 dapur, aku ngeliat..........loh ini kan pan buat friands.......ya udah aja aku langsung beli.........pas lagi sale. Akhirnya.......kesampaian juga bikin kue friands :)
Tapi kalo gak ada cetakannya friands juga bisa pake cetakan cup cake sih.

Ingredients

  • 125g strawberries, hulled, halved
  • 6 eggwhites
  • 1 tsp vanilla bean paste
  • 1 1/2 cups (225g) icing sugar mixture, plus extra to dust
  • 1 1/4 cups (155g) almond meal
  • 1/2 cup (75g) plain flour
  • 150g unsalted butter, melted, cooled
  • Vanillin sugar, to dust

Method

  1. Preheat the oven to 180°C. Lightly grease a 12-hole friand pan.
  2. Place strawberries on a large plate and use a potato masher to crush. Place the eggwhites and vanilla bean paste in a large bowl and whisk until just frothy. Using a coarse sieve, sift over the icing sugar, almond meal and flour. Add the melted butter and crushed strawberries and mix with a wooden spoon until combined. Divide the mixture among prepared friand holes and bake in the oven for 25 minutes or until friands are golden and a skewer inserted into the centres comes out clean.
  3. Stand in the pans for 3-4 minutes, then turn onto a wire rack to cool. Dust with vanillin sugar before serving.
